Instructions

In a large sauté pan add ¼ cup of the vegetable broth and the onions and sauté until soft and slightly brown. Add the garlic and let sauté for about 1 minute more. Add the spices, tomato paste, ¼ cup of vegetable broth and stir until combined. Add the turnips, sweet potatoes, carrots and chickpeas. Cover and let simmer for about 20 minutes on low. To finish the Tagine, add the olives, artichokes and lemon zest and let cook for about another 3 to 5 minutes. If you would like to garnish the Tagine, rough chop the Parsley and Cilantro and add to the sauté pan before you serve.
