This is a healthy version of sweet potatoes without the fat. Taste the true flavor of the sweet potatoes.

Place the cup of water in a deep frying pan. Place the rounds of sweet potatoes in the pan spreading them evenly throughout the pan in layers. On top sprinkle the ¼ cup of brown sugar. Place on medium to medium low heat and let steam, checking every 5 to 10 minutes to turn. You will want to keep them on a lower heat otherwise the water and brown sugar mixture will burn. When they are done they will be darker orange in color and very soft.
