Place all ingredients above into a large stock pot and let simmer for 2 hours. To finish the stock, allow to cool and then strain the stock through a strainer. Set aside. This will make about 7 to 8 cups of stock. To prepare the vegetables, separately blanch the Sugar Snap Peas, Bok Choy and Mushrooms. Set aside. To prepare the Rice Noodles, boil the water and then add noodles according to instructions. Drain and set aside. To serve, heat the Pho, if needed, and then dip 1.5 to 2 cups of broth into a large bowl. Add the vegetables and either add the garnishes or serve the garnishes on the side.
