Cook the potatoes in a pot of boiling water. When the potatoes are soft drain the water from the potatoes and place the hot chunks of potatoes in a large mixing bowl. Using a mixer or a potato masher, mash the potatoes to your favorite consistency, chunky or smooth. Add ¼ cup of the soy milk into the bowl and begin mixing or mashing. As you are mixing/mashing, keep adding the soy milk until the potatoes reach a smoother/creamier consistency. When almost done mixing/mashing add salt and pepper to taste.
