Tomato Cabbage Soup

Place ¼ cup of the vegetable stock in a large stock and add the onions and sauté until translucent. Add the garlic and chili flakes and sauté for ½ minute more.  Add the cabbage and a pinch of sea salt so that the cabbage sweats or become soft for approximately 10 minutes, stirring constantly. Once soft, add the vegetable stock, tomatoes, sea salt to taste and pepper to taste and bring to a simmer. After about 10 minutes of simmering, add the herbs; thyme, bay leaf, apple cider vinegar and Dijon mustard and let simmer for 10 minutes more. Before serving remove the stems of the thyme and the bay leaf. Taste before serving and add more Sea Salt or Pepper to Taste.
