Preheat oven to 350 degrees. Place potatoes, tomatoes and onions on a large baking sheet and bake for 30 minutes. Watch the tomatoes and onions because they may need to be removed earlier. Remove from oven and place in large bowl. Add black beans and stir. After the corn is boiled, cut kernels from the cobs and place in bowl with the rest of the ingredients. Add cumin, smoked paprika, sea salt and black pepper to taste. Serve warm or cold.
