Roasted Red Pepper Hummus

This is one of my staples and favorites, especially when you are working in a position that doesn’t allow much time for lunch.


Place the chickpeas, red peppers, green onions, lemon juice, tahini, garlic, cumin and black pepper in a food processor and blend until smooth. Add the vegetable broth as needed to achieve a smooth consistency. Serving Suggestions: with fresh vegetables, pretzels, backed tortilla chips (see recipe blog) and great to use on making a homemade quesadilla. My Suggestions: I would add some salt to give the red pepper humus a little punch. I also like regular onions and I added a few more to give it a lot more flavor. I then added the green onions (scallions) to the top for dipping. Enjoy!!
