Here is another great recipe for you to try around the Food for Life Program.
For fresh corn (off the cob) or frozen, boil your corn for about 2 minutes and then quickly rinse with cold water. You don’t want the corn to become soggy. Dice the peppers and then put the pieces on a baking plan and place in the oven for about 10 minutes to roast at 375 degrees. Watch the peppers, because they can quickly burn. After the peppers have cooled mix all ingredients in a large bowl and set aside for 15 to 20 minutes to let all the flavors mix. This recipe is best served at room temperature.
Serving ideas: with pita chips or baked tortilla chips (or make your own tortilla chips….see my recipe blog).
The recipe does not call for salt or pepper which is very much needed. You will want to salt and pepper to taste. I also mixed in 2 tablespoons of my favorite salsa and this gave it a great consistency and a nice boda boom.! The last ingredient I added was some canned black beans. You don’t need a lot, so 1/2 of a can will do.
